First, make sure the power switch is fully in the OFF position. Remove the main battery. (This is a good time to put that battery in a charger.)

According to the documentation for the 5D Mark II, under specifications, it does in fact list UDMA-compatible cards. Page 234 under Specifications Reads: Recordable Media: Type I or II CF Card, UDMA-compatible. So, I'd say stick with at least a UDMA-compatible card at what ever speed you are comfortable paying for.
